Roast Beetroot.

I can vaguely remember talking about beetroot on here one time and today I dug a beetroot from John's garden down by the gate and also some Kale and a cauliflower and a cabbage !!!!!!!!!!!!!
I found a recipe for roast beetroot and Kumera ( Sweet potato .. Linda :)
I had a piece of roast lamb for dinner today ( Easter Sunday ) and I cut up the beetroot into small pieces ....they do take a lot of cooking ! I roasted the pieces of beetroot with pieces of Kumera and garlic plus roast potatoes and some fresh broccoli. Plus gravy on the lamb  and it was Yuuum :)

Apparently you can use the cold roasted beetroot and Kumera in a salad with feta !   Watch this space as I did overdo it and have some left for tomorrow :) There must be about 10 beetroots still growing in John's garden along with the weeds and other vegies  !!

That dinner sound so delish, I would have been happy to sit down to a plateful of all the veggies
A salad with the sweet potato and beetroot with some feta and a few lettuce leaves would be a lovely meal on it's own.

I don't know a thing about beetroot, maybe we call it something else.  I'll bet your meal was good and I'll bet you and John both enjoyed it.

It was a lovely meal yesterday and today we had the left overs,  cold lamb along with a salad of the roast beetroot and few pieces of sweet potato and some Feta and I also made a cole slaw from the cabbage :) Good job the weather did turn warm this afternoon once the sun came out :) 
So have you never ever eaten beetroot Linda ???????????????????????

PS : The beetroot is the taproot portion of a beet plant, usually known in North America as beets while the vegetable is referred to as beetroot in British English, and also known as the table beet, garden beet, red beet, dinner beet or golden beet. :)

I've eaten pickled beets and I'm not fond of them.  I've never heard of beets eaten any other way??

The salad sounds so good. When you say "pickled beet" Linda, do you mean the sliced type you buy in a can?

Yes, that kind.  That's all I know about beets, nothing about the vegetable that  you would roast in the oven.

I think Linda only knows prepared beets.... pickled beets ....  pickled in vinegar or whatever in a jar or in a can !!!!
Beetroot just dug up from the garden is an unknown thing :)     You can roast beetroot in the oven or grate it raw to put into a salad too. Or you can even boil it and slice it so it looks like it came out of a can !!!!!!!!!!!!!!  You don't need to buy canned stuff !!!!!!!!!!!!!!!!!!!!

Don't worry, I don't buy beets in a can.  Larry's Aunt Hazel used to pickle her own beets.  I think I'd probably like them the way  you make them.

I have never managed to grow Onions ! Tried in Perth and also in Helensville ! My garlic never did much either ! Potatoes, kumera and parsnips  all good.

Whenever we planted onions they always grew well but then we do live here in the Midwest where we have good soil.
